A fine culinary delicacy only available for a few weeks per year. Garlic scapes harbor the same delicious taste we all enjoy in garlic. Use scapes just as you would use garlic. They make great pesto, are excellent cooked into pasta sauces, or can be stir fried into any dish. 

Most other online stores that sell scapes have a ridiculous markup on them. We want everyone to be able to enjoy this delicacy, and sell ours at a 300% lower price than most other stores.

Garlic scapes (aka umbels) look like a flower, but they are actually a collection of mini cloves called bulbils. If left to fully mature, the garlic plant would eventually drop all of these tiny cloves into the surrounding soil. They are only produced by hardneck varieties, and should be harvested to allow the plant to put its energy into producing large bulbs in the ground. 

These bulbils are genetic clones of their mother plant. However, they tend not to be infected by soil-dwelling diseases and pests as they remain well above-ground as they mature. You can grow garlic from these little guys, but it takes two seasons to produce a sizable bulb. The first year after planting a bulbil will yield a single, undifferentiated clove called a "round". You can then replant these rounds in fall, and the next spring you'll have yourself a standard bulb as you know it.
